Baked Spaghetti & Cheese

1 lb. No. 9 spaghetti
1 lb. Mozzarella cheese
3 lbs. Ricotta cheese
5 eggs
1 c. grating cheese
1/4 c. vegetable oil
Salt and pepper to taste

Boil spaghetti with salt. Avoid overcooking. Mix Ricotta cheese, eggs,
grating cheese, and half the Mozzarella cheese (chopped) in a bowl. Make
thin slices with remaining Mozzarella and set aside. Drain spaghetti,
place in a 10 x 12 x 2 inch baking pan, add in oil. Lace in mixture from
bowl, toss well, level off.

Bake at 400 degrees for 1/2 hour. Remove from oven, place Mozzarella
slices on top, turn off oven, put back in oven for 15 minutes. Cut in
squares to serve.

*Potato Poblano Soup with Cheese*

Serves 8 to 10 (Makes about 12 cups)

2 tbsp unsalted butter
1 tbsp olive oil
2 large leeks, thinly sliced
Kosher salt
3 pounds (about 6 medium) Yukon Gold potatoes, peeled & cubed
4 to 6 poblano chiles, as desired
¼ tsp grated nutmeg
1/8 tsp white pepper
1 ½ c flat-leaf parsley leaves
Asadero (or other white melting cheese), cubed into ¼-inch dice (about
¼ cup per serving)

1. Heat the butter and olive oil in a large soup pot or Dutch oven
over medium heat. Add the leeks and a sprinkling of salt and stir.
Cover the leeks for a few minutes to allow them to steam, then remove
the lid and cook a few minutes more, stirring. The leeks should not
brown. Add the potatoes, stirring briefly to coat, then add 8 cups of
water. Bring to a boil, reduce the heat, and simmer until the
potatoes are tender, about 25 minutes.

2. Meanwhile, roast the peppers. For gas ranges, place the chiles
directly on the burner and char over medium flame. Do this in batches
if necessary. Alternately, you can broil the peppers, turning once,
until they are blistered, blackened, and evenly charred. Place the
chiles in a medium bowl and cover with a dish towel until cool.
Remove the charred skins (reserving as much of the chile juices as you
can), stem, seed, and coarsely chop.

3. When the potatoes are tender, add the poblanos, nutmeg, and pepper
and simmer for an additional 5 minutes. Add the parsley, cool
slightly, then puree the soup in a blender until smooth. Return the
soup to the pot. Taste for seasoning, adding more salt or pepper as

2 (9 inch) pie crusts
2 c. uncooked, dried apricots
1 1/2 c. water
1 c. sugar (can use a little less)
1/2 tsp. salt
1 tbsp. lemon juice
1 tbsp. butter

Preheat oven to 425 degrees. Prepare pie pastry and set aside. Cut
dried apricots into pieces. In medium saucepan, mix apricots with
water, sugar, salt, lemon juice, and butter. Bring to a boil. Cook 5
minutes, stirring constantly. Cool 5-10 minutes. Pour filling into
rolled out pie shells. Cover with pastry strips, weaving them in a
criss-cross pattern. Bake 30 minute or until crust is done.

Amish Tomato Fritters

1 cup of all purpose flour
1 teaspoon of baking powder
1 teaspoon of sugar
3/4 teaspoon of salt
1/4 teaspoon of dried basil
One 28 ounce can of whole tomatoes, drained
1 tablespoon of finely minced onion
1/2 teaspoon of Worcestershire sauce
2 eggs
Vegetable oil for frying

In large bowl combine flour, baking powder, sugar,
salt and basil. Cut tomatoes in 1/2" pieces and drain.
Add them, along with onion, parsley and Worcestershire
sauce to flour mixture, but do not mix. In small bowl
beat eggs and add to flour-tomato mixture. Blend
lightly with fork. Heat oil (medium heat) 1/4" oil in
skillet. Drop batter by tablespoon, patting them down
with back of spoon. Fry until golden brown on one
side, then turn and fry other side. Keep fritters warm
until serving time.

Makes 26 fritters or 4 to 6 servings.

Autumn Bean Burgers (Vegan)


2 cups cooked or canned black beans
1 cup sweet potato, grated
1/2 cup almond butter
1/2 cup red onion, diced
1/4 cup Sicilian olives, diced
1/4 cup whole spelt flour or other flour
2 tablespoons tamari
3 cloves garlic, diced
1 tablespoon fresh ginger, grated

1. Drain and rinse the black beans, place them in a medium bowl, and
mash. Stir in the remaining ingredients.

2. Scoop 1/3 cup of batter at a time to form individual burger
patties. Place a cast-iron frying pan on the stove over medium heat.
Add a bit of oil to the pan and place a few burger patties in the oil.
Fry each burger for 7 to 10 minutes on one side, then flip them over
and fry an additional 5 to 7 minutes on the other side, or until the
centers of the burgers are cooked through. If they brown too quickly,
just turn the heat down a bit to allow them to cook more slowly.

3. Serve hot, on their own or on burger buns with condiments of your

vegetables. Quickly sauteed, the vegetables stay crisp and delicious.

Olive oil spray
4 cloves garlic, chopped
1/2 cup onion, chopped
1 tablespoon fresh ginger, minced
1 14-ounce package tofu, firm or extra firm
2 carrots, sliced into thin rounds
2 cups broccoli
1/4 teaspoon turmeric
1/4 teaspoon salt
Freshly ground black pepper
4 cups baby spinach or 1 package frozen spinach, defrosted
1 cup sliced white button or shiitake mushrooms
1 tablespoon low sodium soy sauce
1 teaspoon sesame seeds, for garnish

1. Heat a skillet, then coat with olive oil spray. Cook garlic, onion
and ginger on medium heat for 3-4 minutes.

2. Add tofu, carrots and broccoli, season with turmeric, salt and
black pepper, then cook for 5 minutes on medium.

3. Add spinach and cook for 3-4 minutes more. Plate into a large bowl,
and sprinkle with soy sauce and sesame seeds.

Serves two.Helpful Hints
Tofu is rich in calcium and is an inexpensive source of protein,
making it a good vegetarian substitute for meat or diary products.
Plain tofu has almost no taste, but it readily absorbs the flavor of
herbs and spices added when you prepare a meal. Tofu is a versatile

main way that soy foods are eaten in China, Japan and Korea.

Strawberry Delight

A crust of finely crushed pretzels gives this dessert a unique twist.
As cool and colorful today as it was when it was introduced back in
the 1960's.

* 2 1/2 cups finely crushed pretzels
* 1/2 cup butter or margarine, melted
* 1/4 cup firmly packed brown sugar
* 1 8 oz. pkg. cream cheese, softened
* 1/2 cup powdered sugar
* 3 cups prepared whipped topping, thawed
* 1 6 oz. pkg. strawberry gelatin
* 2 cups boiling water
* 1/2 bag SCHWAN'S® Whole Strawberries (#745), sliced

Note: If a Schwan's® product is not available in your area, please
feel free to make an appropriate substitution.

1. Preheat oven to 350°F.
2. In medium bowl, combine pretzels, butter and brown sugar. Mix
well and pat mixture into a 9"x13" baking pan.
3. Bake for 10 minutes, let cool completely.
4. In large bowl, beat together cream cheese and powered sugar
until fluffy; fold in whipped topping; blend well. Set aside.
5. In medium bowl, dissolve gelatin in boiling water and stir in
sliced strawberries. Let stand 2-3 minutes or until slightly

Chocolate Mousse Pie

12 ounces semisweet chocolate chips
1 1/2 cups whipping cream
2 tsp. vanilla
1/3 cup powdered sugar
1 9-inch chocolate pie crust

Place chocolate chips in a glass bowl along with half of the whipping
cream and microwave on high at 1 minute intervals until chocolate
melts and mixture is smooth.
Allow mixture to cool.
Meanwhile, beat remainder of whipping cream until soft peaks form.
Add vanilla and sugar and continue beating.
Slowly add chocolate mixture and mix well.
Place in the chocolate pie crust and refrigerate for several hours
before serving.

2 to 3 cups of regular dried black beans
1 large red pepper, diced
1 large green pepper, diced
2 to 3 finely chopped carrots
2 to 3 cloves of garlic
1/2 C. finely chopped fresh cilantro or fresh parsley
1/2 C. rice wine vinegar
3 Tablespoons water
1 Tablespoon of ground cumin (more if desired)
dash of hot red pepper flakes
dash of salt (if desired)

1. Pick through beans and soak overnight with plenty of
water to cover. In the morning, drain the beans and add
fresh water to cover.
2. Place beans over heat. Add one clove of garlic and bring
to a moderate boil. Cook beans for approximately 30-45
minutes until beans are tender but NOT SOFT and mushy. The
beans should be firm enough to hold their shape. Keep a
close eye on their progress.
3. When beans are cooked to the tender stage, remove garlic
and drain. Place warm beans in a large serving bowl.
4. While beans are cooking, chop and dice the red and green
peppers and carrots. Add them to the beans. In a 2-cup
measuring cup, combine the rice wine vinegar, water, cumin
and other ingredients. Mince the remaining garlic and add
it to the rice vinegar dressing. Stir well to combine
5. Toss the bean and vegetable mixture withtherice wine
vinegar dressing. Cover and refrigerate for a few hours
before serving. tossintg warm beans with dressing enhances
the flavors more than if using cold beans.
6. Serve the bean salad over rice and spoon a little dressing
over it.

Yield: 5-6 servings.
